Bethany nasce in Florida e all'età di 4 anni si trasferisce in Texas. Già all'età di 7 anni ottiene il suo primo ruolo e dopo soli 3 anni entra nel cast di “Scout in To Kill a Mockingbird” al Irving Community Theater in Texas.
Lenz si trova in gita a Los Angeles ed è qui che ottiene il suo primo vero lavoro: una pubblicità per i Swans Crossing. L'intera famiglia si trasferisce nuovamente per favorire la carriera della figlia e a New York, Bethany gira molte pubblicità.
Durante il suo secondo anno di scuola superiore viene notata da un regista che la scrive per il ruolo di Linda Halleck nel thriller di Stephen King, "Thinner".
Nel 1998 partecipa ad alcuni episodi di Guiding Light. In seguito alla sua buona recitazione le viene offerta la possibilità di interpretare il ruolo Michelle Bauer. Un anno dopo vince la parte di Rose Cronin in Mary e Rhoda.
Ottiene poi alcuni ruoli minori in Felicity, Maybe It's Me, Charmed e The Guardian.
